I almost forgot about this recipe for grapes. I don't know why it's called a grape *salad*,it's more like a grape treat....My family loves this...

I double the recipe and save half in the freezer for later. That way I only have to clean the grapes and stir it in.....I've also used almond extract instead of the vanilla......


Grape Salad

2 lbs red and/or green seedless grapes
4 oz. sour cream
4 oz. cream cheese, softened
¼ c. sugar
½ tsp. vanilla, to taste
½ c. sweetened coconut
½ c. chopped walnuts (lightly toasted)

Wash and stem grapes. Drain well and set aside.
Beat cream cheese and sugar until fluffy, about 1-2 minutes. Gently beat in sour cream and vanilla, about 30 seconds. By hand, fold into grapes, use as little or as much as you like, fold in the coconut, and walnuts until blended. Place in large serving bowl to chill overnight.

Note: Recipe can be easily doubled. Can use light cream cheese and sour cream.
