Maybe there are new sounds in the apartment that she's not used to. Even sounds that may not be noticeable to you. Maybe she's being alert/protective.

Is she fully potty trained? If you add an evening snack, then she might really have to go in the middle of the night.

My baby, Lucy, sleeps with me also. She's 5 months and I take up the food a couple of hours before bed time. I fear that if she really had to go in the middle of the night, she might do it in my bed because there's plenty of room. Since she's not trained yet, I don't give a bed time snack.

Also, 1 - 2 mile evening walks seem quite long. I'm surprised she's not konked out by the time you get home. Maybe it's just your new place.
