My hubs eats meat occ too - and I'll even cook it for him sometimes; I don't want to push my preferences on him either, so that's part of why I don't mind. 
Has your hubby seen Food Inc or Forks Over Knives yet? My hub learned a ton from both of those. They both have a bit of a different slant, but so educational! Forks Over Knives is really interesting from the point of how our historical diet (typical American diet) has devastated our overall health...and it includes longitudinal studies, which is great. Food Inc may blow your minds in terms of our food industry, and just how messed up/dishonest it is, and how profit rules all...not our health. Both are available at Blockbuster.
