But a soft shell crab is a crab that has just molted. Just like how all shellfish do. The shed their old too small shell (they crawl out the back fyi  ) and they get caught when the shell is super soft. Then they get deep fried and the shell is edible. And they do clean out the guts/lungs, etc and they cut off the face so you don't eat brains, guts, or eyeballs.  Sound yummy? |
