LOL yea they call it a spider roll bc you can see the legs sticking out on one side. Sounds gross but it's not. Very crunchy and yummy. To be honest, soft shell crab doesn't have that much "crab" flavor, and I love crab. It's just the crunchy deep fried-ness that is so good. I think a shrimp tempura has more shrimp flavor (and you can actually feel the springyness of the shrimp meat too) than soft shell crab has crab flavor.
But a soft shell crab is a crab that has just molted. Just like how all shellfish do. The shed their old too small shell (they crawl out the back fyi
) and they get caught when the shell is super soft. Then they get deep fried and the shell is edible. And they do clean out the guts/lungs, etc and they cut off the face so you don't eat brains, guts, or eyeballs.
