Oh do you eat soft shell crab? There is a roll called a spider roll that is deep fried soft shell crab and depending on the sushi joint can have cucumber, avocado, gobo (a pickled root veggie), sprouts, etc. Very yummy and crunchy and everything cooked. If you don't like crab, there's a Crunch roll which is basically the same thing but instead of the crab it's a shrimp tempura.
