I think the soy wrapper should be easily available everywhere. At first I thought it was a CA thing, but sushi is so popular everywhere, I'm sure most if not all sushi joints would be more than accommodating. It just doesn't have the same "bite" as nori, but it's probably the roasted-ness of it that you don't like. That's what my bff said. She now eats it.

Have you tried tataki? It's ahi tuna that's seared on the outside, so some who don't like the texture of the raw fish like this, it has the cooked texture on the outside, but the smooth and soft rawness inside.
