have you ever heard of the tethering system ?
i have never used it myself but i have seen posts about on here before.
actually it may work well for you since you have an open floor plan in your home. i believe you take a 6 ft leash attach it to your dog and say around your ankle , that way she has freedom but will be close by . if you see that she is going to go potty , i am sure you know the signs, you just pick her up and take her outside and tell her go potty.
maybe that would work for you...
