We keep water out all day. However, his food/water stays in the laundry room and when he is thirsty he waits by the door. I have always thought about it this way: if you were thirsty and couldn't drink, wouldn't you be miserable?
Water isn't at night when I'm in bed because he's in there with me. He won't get out of bed unless he is sick. But, we do one last bathroom round before we hit the hay.
