Default Can't figure out my Yorkiepoo's feeding schedule

I have a 6-month-old Yorkiepoo who is a little over 10 lbs. As a younger puppy he had a good routine eating three times per day. I knew as he got older that we would need to eat less often, but his habits have changed greatly and I can't figure him out. Lately he's not interested in breakfast at all. Sometimes he will eat around lunch time, but usually he prefers to wait until later afternoon, and then wants more around dinner time. He loves to chew on a bully stick throughout the day, but other than that we don't do very many treats. He does have a Greenie every evening around 8.

Another rather annoying development of late is that he pretty much will not eat unless I watch him. He used to eat on his own with no problem. I don't know if it's a separation thing or a pack thing--he doesn't show any other signs of anxiety when he's gated in the kitchen. We just completed a 5-week obedience class, so I wonder if this is a way of him deferring to me as his leader or something?

He seems healthy as ever, so I'm not too worried, but I like to have a nice routine down. What would you suggest?
