Any virgin coconut oil that is
not made from copra will do...it also
must not be hydrogenated. You can buy it almost anywhere these days...check your supermarket shelves. Store the coconut oil out of sunlight, but you can store it out of refrigeration. It solidifies at 75 degrees...melts at 76 and is safe for frying, believe it or not...just don't allow it to smoke and if it does, pitch it out and start over. Potatoes, chicken, etc. fried in coconut oil are excellent! Try making coconut shrimp in coconut oil! Put it over rice with coconut and chopped pecans added! Yummmm!!! For extra goodness, use black ("forbidden") rice. Wow!!! (Note: Do not use the sweetened 'angel flaked' coconut, though...get the real stuff from the freezer section of an oriental market or natural foods market, or get the dried coconut meat...try an Indian (India) and reconstitute it in coconut milk). Coconut oil is rich in lauric acid, superceeded only by 'mother's milk'...which is why it used to be a key ingredient in infant formulas long ago when everyone made their own...lol...and is absolutely excellent for such a long list of stuff that I won't bother to include them because a search will find the info, too. Plus, it tastes good! lol I love it on organic popcorn!
