In Canada, the date of sale on the contract is considered to be the date the buyer owns the dog. Therefore if the dog is used at stud it would get pretty complicated as technically the breeder does not own him any longer. For registering resulting litters, I would think the new owner would sign as owner of stud.
Gotta watch who you are dealing with. the breeder should have had it in the contract that he/she can use the stud dog for breeding purposes until the new owner takes actual physical possession.
