You are right. Hormones are still in the brain, even if not produced anymore. Plus, the dog had been conditioned to receive pleasure through humping. Now, he has to work backwards -- 'no pleasure in humping'. It might take a bit. But eventually they stop, or at least do it extremely rare.
But he is quite a stud going at it 2 days after!
