When introducing a dog to raw it's advised to remove all skin for a while because skin is rich. Once their system has adjusted to raw(solid poops etc) the skin can and should be left on. Raw animal fat is very healthy, it contains a lot of nutrients and amino acids. Just like there is fat in kibble and premade raw there needs to be fat in a raw diet. A lack of dietary fat can result is skin and coat problems.
I break the wing down into 2 parts usually the drumette and the wing itself with the little leg.
