Great, you have giving me more information to work with but I only have a few minutes this morning as I have to go to a meeting so this will be short and sweet.
Your rescue did a good job but what about her teeth? What shape are they in. Does her breath smell? Is there plaque on them?

I would let her sleep with you. I have a 3# who sleeps with me. They move around and she might sleep on the other pillow.

You need to get her to eat so you might have to experiment. If I bring in a rescue the first rule is to make them eat even if it junk food so I give them Cesars and then slowly wean them off it to a better wet food and I put this on top of their dry food. Natural Balance has a roll food that I hear dogs love. There is another line I just can't think of right now that PetSmart sells that is also better food - I will get it for you...but can't right now. My Yorkies do not like biscuits for treats and stay away from GREENIES - they could kill your little girl. Mine like Charlie Bear treats.

On the walking it just doesn't sound to me that she has been trained to walk on a lead. I would buy a 6ft cotton lead for the time being so you have better control over her and she stays closer to you.

More later but must get ready for my meeting.
