First, welcome to YorkieTalk! You've come to the right place!
If it were me, I'd go back to pee pad training. You had some success there. I expect that she got confused when you started trying to get her to go outside. She knew that you weren't happy anymore when she used the pads and couldn't figure out WHAT it was that you wanted. I'd go back to taking her to her pads to pee and rewarding her very heavily when she gets it right. Do NOTHING when she gets it wrong.
When she's got the pee pad thing down
really well, I'd again try the outdoor pottying.
I agree that it would be best to contain her in a small room with lots of pads when you are gone - perhaps a large bathroom or a laundry room? Put pads by the baby gate if that's her preferred location.
