Did you know that you can adjust your settings so you have to approve tags before they show up on your profile? Tags will still show on the original post regardless (unless you delete them), but you CAN keep them from showing up on your profile.

RE: relatives that you don't want knowing everything. You can put them all in a list, and then block certain (or all!!) posts from them. When you want to post something, first click the button beside the "post" button and choose the "custom" option. It should allow you to exclude certain people/lists, or to only make a post visible to certain people/lists.

These things won't solve every privacy concern, but they have made my facebook life somewhat easier!
