2 cups fat free low sodium chicken broth
1 cup rice
1 small head broccoli cut in small florets
1 small box mushrooms cut up
1 small tomato cut up
1/2 cup frozen peas
1/4 roasted red peppers cut up
Put veggies, rice, and broth in pan. Bring to a boil, cover, and reduce heat. Follow rice instructions for cooking. (depends on what kind rice you have).
Fluff with fork. Place in lovely serving dish, garnish with finely chopped red and green peppers.
