Are you traveling by car? Alone? Maybe a snoozer type car seat where she can see you would be helpful. She's still confined, and safe but has more visibility. If you're like me, and have a small car, you may want something that collapses small so you have room for groceries and the occasional passengers. I put Kaji's carseat in the front and turn off the passenger airbag. He can see me and he relaxes a lot more.

As far as leaving her at home with your parents... that's a tough one. Being in school is not easy, but I'm sure you can find the time and places you can take her to help stimulate her mind and keep her happy. Dog parks a few days a week might be fun, or get together with neighbors and have play dates with other pups her size. It can be done!
