Not a silly question at all, there is a whole chapter on it in my new book.
It depends on the use. Usually the rule is be consistent if you typically use US english then stay with that, if you use Canadian/British than stick with that.
Basically the American spellings spells things more phonetically, whereas British maintains the original spellings which displays the origin of the words.
