I either use a sponge on the head, or I turn the water pressure down and only spray from the top of the head and let the water run down. Dogs can close their ears (to an extent) to avoid getting water in their ears.
When I rinse the earflap, I spray the water from the center of the head out, and to do the underneath, I plug the ear with my thumb and spray from my thumb to the outter edge, at an angle towards the dog's butt.
I never spray water directly into the dog's face, as I have seen done at the groomers. I always start at the back of the neck and work up, holding the dog's head up, so the nose is higher that the rest of the head, with the sprayer directly on the skin. I do the throat, chin, and neck the same way, with the sprayer right against the skin.
