She growls at her toys...is this normal? She'll latch onto her teddy bear, drag it around the room, yank her tiny little head back and forth vigorously like she's attempting to shake it to death, and growls at it....isn't that hurting her little neck??

Welcome! I am not sure if her coloring will change... I guess it depends on what she has more predominately in her as far as her fur. Yorkies change colors and can continue to change colors for a couple of years from what I have read here.
You may try using treats to get her to sit still for her hair bows.... good luck there. I don't use bows on Jack but when his hair was longer, I would use a clip to keep it out of his eyes.
Not sure what to tell you about the clothes either - Jack will tolerate a t-shirt, only if its very cold outside. He hates his jammies and coats....
The growling, yanking and shaking her head back and forth with her toys is I believe a Yorkie trait. Yorkies were bred to hunt rats many years ago and I believe the shaking of their heads back and forth was a way for them to kill the rats... not 100% certain on this, but it makes sense to me.
