and yes i do this. i always freeze all peppers for later use in chili or meals.
I save tomato juice (canned) and whole tomatoes (canned)
freezer corn
freeze garlic
freeze leftover flour to always have extra just in case
freeze or fridge all pasta sauces for later
soups and stocks off boiling something get used later too
i save more than i usually end up using and forget about them and then when we clean out the fridge or freezer we end up throwing some out. but some things we keep a long time like flour, peppers, ext.

How are the glass jars going to travel do you think? Will they do okay? I wish we could vacuum pack them
