Lean chicken and rice is okay for upset tummies, but feeding it long term (3++ weeks) can cause some problems because it is not nutritionally balanced for dogs. If this is going to be more than ten percent of their diet long term, you could get a chicken and rice recipe formulated for them to make sure they are getting everything they need (the adult chicken and rice recipe on petdiets.com would probably be a good choice). Alternatively, you could choose a canned food of higher quality.
I assume their fecals are negative? Bloodwork good (no medical reason for them being skinny)? Also, are you sure they are skinny or are they just lean and healthy?
