I wouldn't be too quick to switch from Iams..not because it is the best food in the world, but because it seems to be doing a good job of managing what your vet thinks are severe food issues.
I'd consider Hill's and Royal Canin. Opinions very greatly on YT, so you will get lots of different thoughts.
