I didn't get it either. But it seems to be common practice and it worked. Of course, there was a little more to the vet convo...he also said to monitor her closely for any changes (lethargy, etc.), and to look at her poop (which she did fairly quickly after eating the chicken AND bread) for any signs of blood and if there was blood to call him back on her personal cell number and he would meet me at the office, immediately. But I was just letting the OP know that the bread in itself is probably not an issue based on my experience.
