Add flour, oil, and the egg, then knead all the ingredients to make a smooth dough. Cover and let rest for 30 minutes.
Preheat the oven to 350 degrees F. Line a baking sheet with baking parchment.
On a floured surface roll out the dough until about 1/2inch thick and use a cookie cutter to make crescent shapes (or shape of your choosing). Place the cookies on the baking sheet and decorate with pumpkin seeds.
Bake the pumpkin crescents for 25 minutes. Turn off the heat and let the cookies dry in the oven for another 2 hours.
I would not recommend this for a Yorkie, it's has a very high fat content over 50% of the calories are from fat. Remember that all it takes is one time, too much fat, and it can lead to chronic pancreatitis! Sausage is a real no-no for Yorkies.
