I'm under he impression that it's best to have food available all the time for the puppy. Ask your breeder for ideas on that. As far as a potty schedule, it sounds good to me! Don't forget to give him a chance to potty after play time and feeding. It would look like:
Take him out of the crate for potty, play time, another chance to potty then back in the crate. The more chances he has to get it right, the better.
