I am probably not the best person to answer this, but I can tell you that a groomer will trim the hair in the paws. I know that my groomer does and she also trims around the back areas you mentioned to help control issues with smell and getting poop matted in hairs etc.
I know that I took Roxie to the groomers for the first time sometime between the time I got her (12 weeks) and 16 weeks just to take care of these areas and to help her get use to having a groomer handle her. Check with your vet, friends, etc to help you find a good groomer in your area. Talk to a groomer that you feel you can trust (mine actually works out of my vets office) about when to start grooming.
