i dont make it, i order it out. i'm really not the best cook but i go out to eat alot. i like calves liver and it has to be served medium rare with lots of sauted onions on it and a little bit of ketchup to dip it in. yummmmm

i would get very sick of it if i ate it too much. so maybe a few times a year i eat it
never got into eating liverwurst or pate, love foie gras, i've had it served with Beef Wellington. ( that is my very favorite special entree to order )
