It's a mexican delicacy, and some chefs are trying to get it to become popular in the US by renaming it "corn truffle". Hahaha. Supposedly it's some sort blight on the corn crops and makes it gnarly looking, like the kernels are gonna pop and turn them gray. In fact, it is more nutritious than the corn it infects.
It's cooked in a quesadilla but instead of a flour tortilla they use masa and fill it with the smut, regular corn, lettuce, queso, crema. It's really good and not too greasy so a bit more healthier than a regular quesadilla.
I thought I told you guys this like a million times already?
