We've switched to totally vegetarian but I haven't quite figured out what I"m spending on food yet. But, to answer the above question, I got a 'genius chopper' from QVC and do chop everything on Sunday as I quickly figured out that vegetarians spend their lives chopping! I clean up a big bowl of salad greens and spin it and it lasts a couple of days as long as we put nothing else in the bowl. So, I do that three times a week, but otherwise I just pull chopped stuff out of the fridge every night and throw something veggie together. Our health 'numbers' have improved a lot (bp, cholesterol, blood sugar etc) so I'm going to try to keep it up.

I also buy quinoa, rice, pasta, etc out of the bulk bins at our local Whole Foods or similar store - I do think that's cheaper. Also buy some canned veggies, in particular green beans and spinach, by the case at Costco and other canned beans at Trader Joes which is cheapest.
