I have great sympathy for single folks who are trying to follow a healthy diet. You are correct, most recipes are much more fun if you are cooking for more that one. But to be good to yourself, buy some of the ziploc plastic containers, try a recipe, eat one portion and freeze the rest! Then you have a few of your OWN frozen meals for future quick dinners!
