Can you look at the instructions on a box of cake mix? I think they usually have instructions for baking in round layers, in a sheet, and for cupcakes. They use the same mixing / ingredient instructions, but adjust the times and temps depending on which pan you are using. You could go by those instructions to help you determine how to adjust your time and temp for baking in a muffin pan. I don't see why it wouldn't work, even if it is denser than a regular cake.
