I used to eat fish brains when we would always have whole fish for dinner. It has so much flavor in it, like eating bone marrow. I have not had sesos, but it is deep fried, so it's not going to be kind of gelatinous like fish brains or bone marrow. One of the most enjoyable aspects of food for me is the texture contrast in each dish. Soft with crunchy, it's like another layer of flavor but in texture.
