They steam cook the head and the meat is mostly from the cheeks and face. It is so tender. Even moreso than lengua. It is not brains, that is sesos. After the mad cow scare its impossible to find sesos in so Cal now that I actually want to try it. Even though the mad cow disease was from a different type of cow entirely. A gf in SF says they have it up there in the bay area.
