I would take a guess that they only have them mixing it for a few days so that there are no gastro-intestinal problems. At least that was the reason for us. But there could be other reasons... Our vet told us to mix the old food with the new for about 3 days, so that she wouldn't get an upset stomach from the drastic change to the new stuff.
