Well, I'll tell ya - - I bing'd and googled giraffe jerky and got a variety of hits that were all so weird that I think you're trying to fool me. Giraffe jerky is an undefined term in the Urban Dictionary. It is NOT on the list of 53 normal and strange jerky varieties at the Dublin Jerky Company of Grandville MI. Lastly, giraffe jerky is associated with a "dangerous" website that I backed out of in a hot hurry. So, if you aren't kidding me, tell me what it tastes like so I can render an educated guess at yuck or yum.
