Nothing wrong with a pot of beans, either. They're high in protein and with just a little meat and some herbs and spices for seasoning, you've got enough for 6 or 8 from 1 pound of dry beans. Some other good things are gumbo, creole or jambalaya....all very tasty and don't need too much meat or seafood to be a good meal. Stews can be made with less meat and are very good, too.
