"Human grade" has more to do with how the food was handled than the perceived "quality" of the food. For example, if a chicken falls off a conveyor belt and lands on the floor, it is no longer "fit for human consumption", aka "human grade".

Another way to make an informed decision regarding differing "quality" between pet foods would be to research (email companies directly) the methods, or lack thereof, each utilizes when denaturing their meats.
