I just shredded some for the freezer to make zucchini bread and zucchini cake. I also make zucchini pie, but it's too hot here to put on the oven.
Hopefully when it cools down I can make zucchini bread. It's good toasted with a little butter. You can also make a marinara sauce and put some shredded or sliced zucchini in it and have it with macaroni or dip italian bread in the sauce. |
