I didn't crave sweets; (besides semi-sweet chocolate) I craved bread! I started making my own whole wheat bread thinking at least I could control the bad things in it, and make really healthy whole wheat. Unfortunately, it was really good, and even complex carbohydrates turn to sugar. All food turns to sugar in the bloodstream, but you just want the food to turn to sugar at a slower rate. Simple sugars turn immediately, complex carbohydrates take a medium amount of time and proteins take the longest. If too much sugar is in the blood at one time, an overabundance of insulin is made, and insulin makes you hold onto every fat cell you have. So you can be eating a tiny amount, but still gaining weight.
