I haven't been to any taquerias that have tripas or sesos on the menu. I get excited enough when I see cabeza and lengua.
I had to go get clarification. According to my dad, menudo is made with the cow's stomach. Tacos de tripa are made from a calf's small intestine. Does that answer your question?
