So is tripas different than the tripe that is in menudo? I like tripe in menudo and in pho (viet beef noodle soup). It's the meat that's flat on one side and bumpy/fuzzy on the other. But tripas/intestines are sliced up like hollow sausages right? That's how the taiwanese kind looks like.

I haven't been to any taquerias that have tripas or sesos on the menu. I get excited enough when I see cabeza and lengua.
