Have you tried tacos de tripa? (intestine tacos) Yum yum! I haven't had hose in forever! They sound a lot like what you're describing. They're fried, chopped up and served with whaever chile you'd like. My mom doesn't make them because they're fried. The last time I had them I think I was 13. my uncle made them. I haven't seen him since.
