Some balanced and healthy homecooked meals can include dark meat. I'd buy a recipe with dark meat included (one formulated by a veterinary nutritionist).
But you should just be able to put the food down, walk away, and he'll eat when he gets hungry. After 20 minutes, back in the fridge, try again later. No treats or chews if he won't eat his food. How about kibble?
