We all have different comfort levels as do our vets.
Adult Yorkies should not suddenly go hypoglycemic after eating very little for a day. The fact that the sugar did help the gum color would suggest that it was a sugar issue. That shouldn't be. So yes, if Ellie's gums went grayish and Nutrical helped, I'd be wondering why because it is not normal. And for it to happen twice and the sugar to help twice, I'd be very concerned that there is something going on here.
I'd wonder why an adult dog suddenly can't regulate blood sugar. So yes, I'd be doing bloods unless my vet could give a very good explanation about why it happened.
The other symptoms could have been anal glands. Not sure how weird gum color would go with that.
