Low fat is not the only requirement for a dog with pancreatitis. Pancreatitis is triggered by more than fat, and it is not known all the things that trigger pancreatitis, so buying any old low fat dog food on the market is not a wise idea. You need to ask your vet for a specific recommendation. One commercial food that was recommended to us was the Royal Canin Gastrointestinal Lowfat which is suitable for my dog with pancreatitis. However, I do not feed this food as I home cook for my dog with the help of a board certified veterinary nutritionist. You mentioned home cooking and you should not be feeding chicken and rice without the diet being appropriately balanced by a vet.
