According to the description on Entirely Pets, the beef tail is smoked. The Merrick website doesn't say.
The toothpicks I have purchased recently seem to be much darker and crunchier than they were in the past. Maybe Merrick has been smoking them longer because of the scare/recall with their beef square product.
