Glad all went well with her surgery and that she is recuperating nicely. If she is bleeding, I think I would take away the chewy. What kind is it? If it is a bone/food type item, maybe try replacing it with something rubber that she can gnaw on (make sure it is a safe item that she cannot chew off a piece from). She will want to chew a lot as she cuts her new teeth, as you likely know.
When Max had his baby teeth pulled, we let him chew gently on our fingers and we massaged his gums with clean fingers.
